Why do more people experience sensitivity towards gluten?

An increasing number of people exhibit sensitivity towards gluten (a protein found in wheat, barley, rye etc.), while only about one percent has celiac disease, an extreme immune reaction to gluten. 

Gluten sensitivities may lead to abdominal pain, gas, bloating, and bowel problems whenever gluten is consumed. These symptoms are very similar to other types of digestion problems, such as Irritable Bowel Syndrome. Gluten may even affect our brain and entire nervous system adversely.  

Recently it was discovered that bacteria living in the gut of healthy volunteers are able to break down the grain protein gluten. This means that with the right bacteria in our gut we should be able to digest gluten and not have issues with it.  Unfortunately many of us…
