Hi friends! Here I am with part II of the perfect summer dips series. Today I would like to share with you a super fresh dip, that you can make whenever you want to indulge in something comforting and healthy at the same time. The dip kind of reminds me of a pesto, but it is much milder and light in flavour. You can actually still use it on pasta, it tastes pretty good. 😉 It also goes very well with crackers, and raw veggies. Let me tell you a bit more about the ingredients in this recipe.

Edamame or green soy beans are super tasty and healthy, as they contain lots of fiber, proteins and minerals. They are a good source of iron and vitamin C, and as they are low in fat but high in protein, they are a great addition to your menu, if you are trying to lose weight. Source of manganese, vitamin K, potassium and magnesium, edamame helps with bone health and increases the bone mineral density.

Green peas are another great food for weight loss, as they too are low in fat but high in fiber and protein. They also have anti-ageing properties because of their high content in anti-oxidants. A great source of vitamin K, and B vitamins, green peas can help improve bone health and reduce the risk of heart disease.

Spinach is a powerhouse of minerals and vitamins, such as vitamin A, C, E and K and folate and minerals like zinc, calcium, iron, magnesium and phosphorus. It is great to protect your body from free radicals, as it contains anti-oxidants too.

So now that you know you are getting so much goodness from this dip, lets get to the recipe! 🙂

Ingredients: 

  • 1/2 cup edamame, boiled
  • 1/2 cup green peas, boiled
  • 1 pressed cup fresh spinach
  • a handful of fresh basil leaves
  • juice of 1/2 lime
  • 4 tbsp extra virgin olive oil
  • juice of 1/2 orange
  • 1 clove garlic, minced
  • 4-5 tbsp water, or more depending on the texture you are after
  • 1 tsp cayenne pepper
  • salt & pepper to taste

Method:

  1. Place all ingredients in a food processor, except for the water, and blend well.
  2. Start adding the water slowly until you reach the consistency you desire. You should aim for a creamy and thick texture.
  3. Season to your taste.
  4. Enjoy!
