It makes me so happy when I see that big supermarkets like Delhaize are introducing new, healthy product ranges. It was one of the reasons I agreed to participate to their new product launch in May here in Luxembourg, preparing recipes with their products, and why I am happy writing about their products on my blog. If you haven’t been shopping in Delhaize recently you might find a lot of new products, such as a wide range of vegetarian and vegan food, organic produce, and their new range of superfoods. It is all nicely packed, offering you the perfect portion size for an afternoon pick-me-up snack or a quick breakfast.
Today I would like to share with you a super quick recipe, that I created with their Vitality Superfood box. What I love about this mix is that it contains a perfect mixture of nuts, seeds and superfoods. Packed with almonds, brazil nuts, blueberries, goji berries, pumpkin seeds and pistachios, this mix tastes delicious and is loaded with fiber and nutrients. The ingredients in it contain minerals, such as selenium and zinc, that can help strengthen the immune system and antioxidants that help against free radicals in the body. I thought it is a perfect base for a delicious and healthy desert! The Energy Bites I am sharing with you today are not only tasty, but they are also so easy to make and you will need only four ingredients to prepare them. The best part is that you will be consuming lots of nuts and seeds, but in fact will feel like you are eating a chocolatey, sweet treat. Cool, right?
So here is what you will need for those Energy Bites:
Ingredients (makes about 30 bites):
- 250 gr of the Vitality Super Food Mix
- 6 Medjool dates
- 3-4 tbsp raw cacao powder
- 1/2 tsp salt
- 1/2 tsp vanilla
Method
- Place all the ingredients in a food processor and blend well until you get a smooth mixture. If your blender is powerful enough the mixture will form a ball. If you are using a not so strong food processor, than you will get a more of a grainy texture. In this case, simply take a spoonful of the mixture and place it between your hands. Start pressing the mixture well between your hands and you will see how the oil from the nuts and seeds will be released, allowing you to form little balls from the mixture.
- Continue in the same way until you finish all the mixture. You can store the bites in the fridge for up to a week.
