As you might know I am a big smoothie lover. Smoothies are one of the easiest ways to ensure you are consuming enough fruits and veggies, and a great option for breakfast or afternoon snack. They provide you with lots of minerals, vitamins and fiber, which is great for digestion. (If you want to know more about the difference between a juice and a smoothie have a look here). This following recipe is great for those who don’t really like eating greens, but know they should. Trust me, you won’t taste the spinach in the smoothie, and this makes it a great recipe for children and people, who don’t like the taste of greens. The blueberries and strawberries provide the dominant flavour, while the banana gives a smooth texture and sweetness. The combination of spinach and strawberries is also great, as spinach is high in iron, and iron is easily absorbed together with vitamin C, which is contained in the strawberries. I love adding blueberries as they taste great and are rich in anti-oxidants, folate, vitamins C and B6. The touch of fresh basil is the surprise element in this recipe, and it helps enhance the flavour of the berries. Basil is an excellent source of vitamin K, manganese, copper and calcium, so don’t just use it for plate decoration, but integrate it often in your sauces and dips. 😉

Here is what you will need for this Berry Spinach Smoothie:

Ingredients (Serves 2):

  • 1 cup spinach (or 1/2 cup frozen spinach)
  • 1/2 cup blueberries
  • 8-9 strawberries
  • 1 banana
  • 1 cup non-dairy milk (I used rice milk)
  • juice of 1/2 lemon
  • 3-4 basil leaves

Method:

  1. Put all ingredients in a blender and blend until smooth.
